Freezers

Commercial deep freezers are a convenient and efficient way to store perishable food. However food that is not frozen properly or is handled unhygienically may cause food poisoning. Follow this guide to ensure you are using your freezer correctly.

TEMPERATURE

The freezer is only capable of preserving foodstuffs effectively when it is operating at the correct temperature, which is a minimum of -18°C, (0°F). A thermometer should be available so that regular checks can be made.

STOCKING

Overloading will result in uneven freezing and the correct temperature not being maintained. Usually frozen foods can be kept for at least 3 months, however prolonged storage is likely to result in some loss of quality. Always follow the Manufacturers Advice. Always ensure stock is rotated. Use old before new.
  • NEVER - Refreeze food which has been defrosted.
  • NEVER - Accept deliveries which have defrosted or are warmer than -12°C
  • ALWAYS place frozen foods in the freezer at the time they are delivered.
  • As a general rule, NEVER Freeze products which are intended by the manufacturer to be sold as fresh. Where the manufacturer advises fresh foods can be frozen the instructions given should be followed, however, they should be frozen in small portions.
  • ALWAYS - Wrap foods which are frozen, either with silver foil or plastic film or use suitable plastic freezer boxes.
  • ALWAYS Label frozen items and record:- the contents; the date; the date frozen; and other information ie. cooked/raw etc.

Thawing

It is important to ensure the food is completely thawed before being cooked unless the manufacturers’ instructions state otherwise. Always DEFROST such items in the REFRIGERATOR not at room temperature.

Freezer maintenance

  • Maintain the freezer in a clean condition and defrost regularly.
  • Keep seals clean and replace when damaged or cracked to maintain the thermal efficiency.
  • Try to site the freezer in the coolest part of the premises, away from sources of heat such as cookers, ovens or radiators.
